Claremont Health Salad 




Ingredients:

Salad
1 head of cabbage, shredded
2 carrots, thinly sliced
3 cucumbers, thinly sliced (not peeled) 
1 Bermuda onion, thinly sliced
1 green pepper, thinly sliced

Dressing
3/4 cup white vinegar
1/2 cup corn oil
3/4 cup sugar
1 tbsp. salt
4 tbsp water

Directions
Combine  the salad ingredients in a large bowl.
Whisk together dressing ingredients in a small bowl.  Pour the dressing over the veggies, cover and refrigerate overnight.
Enjoy!

NOTE
I use as much organic produce as possible.  I feel more comfortable using unpeeled organic veggies.
