Grandma's Squash 



Ingredients:
1-2 tbsp olive oil
salt and pepper to taste
3-4 onions, sliced
3 yellow squash, sliced
3 green zucchini squash, sliced
1 can tomato paste
1 box Pomi Chopped Tomatoes
1 can plum tomatoes
1-2 tbsp brown sugar


Directions

Heat olive oil in a large saucepan.  Add onions and sauté until caramelized (slightly brown/transparent).  Season the onions with salt and pepper.  Add squash, zucchini, tomato paste,  chopped tomatoes and plum tomatoes.  With your spatula, break up the plum tomatoes.  Stir all ingredients together, cover and simmer.  Stir occasionally for about an hour.  When the squash is just about cooked, sprinkle in the the brown sugar and allow to simmer for a few more minutes.  

Serve immediately.  This keeps for days in the refrigerator and heats up in the microwave or on the stove.  Its also a great dish to freeze for those days when you have no time to cook.

Saute the onions until they look like this.



This is the yellow squash I use.  Throw it in the Cuisinart and it turns into this…..

It's okay to leave the skin on when it's organic!
This fresh zucchini slices up quickly and easily.

Organic zucchini--unpeeled!



Add all the sliced vegetable as well as the tomatoes.  You can pile it up in your pan, it cooks down.

Simmer until the squash is cooked--soft and tender--about an hour.

  1. Hello to @crayjewmama :) I make a variation of this too - put in a casserole dish, top with cheese - bake & serve on pasta or chicken. Lasts for a few days - YUM!
